What is your suggestion for my leg workout routine? Is it better to stack them on the same day as my CAROL rides or on the non-CAROL days?

We would suggest doing your legs on separate days because you want the muscle glycogen to re-stock so that the stimulus is stronger.

Some people do them on the same day, so if you don't see a drop in your performance or increase in fatigue, then listen your body. Just be sure to "re-fule" the glycogen otherwise the exercise is less effective.
